Riki Tiki Tavi
1 oz coconut caramel*
3 oz roasted pineapple puree
1 oz lime juice
Shake it all over some ice. And then strain it over new ice.
Enhance with a paper umbrella and bamboo straw.
*steps to prepare coconut caramel:
Mix the sugar that is caramalized and broken with coconut milk. It can also be made substituting brown sugar syrup with some fresh coconut milk.
