How to make Chironji And Makhane Ki Kheer Recipe

Ingredients

  • 1 cup Phool Makhana (Lotus Seeds)
  • 1 teaspoon Ghee
  • 1 liter Milk
  • 1/4 cup Sugar
  • 1/2 teaspoon Cardamom Powder (Elaichi)
  • 1/2 inch Cinnamon Stick (Dalchini)
  • Saffron strands, a few
  • Ingredients for Roasted Nuts
  • 1 tablespoon Badam (Almond), sliced
  • 1/4 cup Raisins
  • 1 tablespoon Chironji
  • 1 teaspoon Ghee

Method

  1. To begin making the Chironji & Makhane Ki Kheer Recipe, we will first roast the Phool makhana in ghee until crisp and aromatic.
  2. Heat a teaspoon of ghee in a heavy-bottomed pan and roast makhana while continuous stirring until they become light brown and crisp. Once done, remove from Kadai and set aside to cool.
  3. Coarsely grind half of the roasted makhana in a mixer grinder and keep aside. We will use the remaining roasted makhana as a whole into the kheer.
  4. Boil the milk in a heavy-bottomed pan and condense the milk until it becomes just close to half. Keep stirring occasionally to prevent the milk from settling into the bottom of the pan.

Method continued

  1. Once the milk is condensed, add the sugar, the roasted Makhana (whole), and coarsely ground Makhana. Mix well and cook on a medium flame for 5 to 10 minutes, while stirring occasionally until the kheer becomes thick and the makhana has absorbed and cooked through.
  2. Add the saffron and nutmeg powder into the kheer, mix well. Then cook on a medium flame for another 3 to 4 minutes, while stirring occasionally.
  3. While the kheer is cooking, heat a teaspoon of ghee into another small pan and roast all the dry fruits in it till light brown and you get a roasted aroma.
  4. Add half of the roasted dry fruits to the Makhane Ki Kheer and simmer for 3-4 minutes and turn off the heat.
  5. Finally, serve Chironji And Makhane Ki Kheer. Furthermore, after your delicious festive meal of Jodhpuri Aloo, Ajwain Puri, Satvik Carrot Sprout Salad, and Mirchi Ka Chunda.

How to make Chironji ki Dal Recipe

Ingredients Of Chironji Ki Dal

1 Cup Chironji (charoli seeds), soaked

2 Tbsp Ghee

1 tsp Cumin seeds

2-3 Green cardamoms

4 Peppercorns

1 Tbsp Ginger, finely chopped

2 Green chillies (slit)

1 Tbsp Coriander powder

2 tsp Rock salt

1/2 tsp Chilli powder

2 Tbsp Yogurt

1/2 Ghiya (optional), chopped

To garnish Coriander leaves

Method

1.Rub the seeds to remove the husk, discard the husk.

2.Grind or blend half into a paste. Heat ghee, add cumin, cardamom, and peppercorns. Saute a little, add the ginger.

3.When the ginger browns a little, (If you are using ghiya first add the ghiya and saute) add the yogurt a little at a time, stirring well to avoid scorching. When the oil separates, add coriander, salt, chili powder, and green chilies.

4.Saute further, add the chironji, and turn around to mix well. Add enough water to come up to about 2 cm above the mixture and bring to a boil.

5.Simmer till the chironji is cooked through. Finally, serve hot garnished with coriander leaves.

Safety profile

Cudpahnut seeds can make a loss of appetite for those people who have a weak digestive system or a weak stomach. It can also cause constipation. Frequent urinating during the nights is one of the side effects caused to patients who consume it orally or apply it externally.
