Coconut oil is easily available online and in supermarkets.All you need to do is choose the right product based on your requirements.
1.Organic extra virgin coconut oil,unrefined.

4.Refined coconut oil
5.Pure coconut oil for hair and skin

Store:

Coconut oil has a high melting point -about 24 to 25 degree Celsius.Hence it is solid at room temperature and melts only when the temperature rises considerably.It is often in this form and not supposed to kept in the refrigerator.
If you buy it in a pack after opening the pack be sure to keep the oil container with a tight lid and broad mouth.

Dishes using coconut oil and its nutrients values:

Vermicelli Upma:

Ingredients:

1.2 cups wheat vermicelli
2.2 tbsp coconut oil
3.1 tsp mustard seeds
4.2 tsp urad dal
5.6 to 7 curry leaves
6.1/4 cup finely chopped onions
7.1 1/2 finely chopped green chillies
8.1/3 cup freshly grated coconut
9.1/4 cup chopped coriander
10.1/2 lemon

Method:

1.Boil 2 cups of water in a deep pan.
2.Remove from the flame add the vermicelli,1/2 tsp of oil and little salt,cover and keep aside for about 5 minutes.Drain and keep aside.
3.Heat the remaining 1 1/2 tsp of oil in pan and add the mustard seeds and urad dal.
4.When the mustard seeds crackle ,add the onions and green chillies and saute on a medium flame till the onion turns translucent.
5.Add the vermicelli,coconut,coriander leaves,lwmon juice and little salt if required.Mix well and cook for about 5 minutes.

2.Capsicum vegetable:

Ingredients:

1.2 1/2 cups capsicum cubes
2.2 tbsp sour curds
3.1 tbsp coconut oil
4.1 tsp mustard seeds
5.1 tsp cumin seeds
6.1/4 tsp asafoetida
7.5 to 6 curry leaves
8.Salt to taste
9.2 tbsp grated coconut

Method:

1.Combine the capsicum and sour curds in the deep bowl,mix well and keep aside.
2.Heat the coconut oil in a small non-stick pan and add the mustard seeds.
3.When the seeds crackle,add the cumin seeds,asafoetida and curry leaves.Saute on a medium flame for a few seconds.
4.Add the capsicum curds mixture,salt,1 tsp of water and mix well.Cover with a lid and cook on a medium flame for about 5 minutes.
5.Remove from the flame and add the coconut.
6.Serve hot.
